She specializes on meat safety and microbiology, Hazard Analysis and Critical Control Points (HACCP) systems, meat quality and processing, and food product research and development. She obtained both her PhD and MS in Food Science from Kansas State University, a global center of excellence in food safety research and education. Her primary area of research is on development of control strategies of food-borne pathogens in meat supply chain.
