He is an Assistant Professor from the Institute of Food Science and
Technology, CAFS, UPLB. His work focuses on microbial food safety wherein he has
published papers on food hygiene and sanitation of dairy and leafy vegetables. His most
recent works include shelf-life extension of salted duck eggs by minimizing microbial
contamination and using probiotic microorganisms to improve ice cream’s functionality.
